I enjoy Amsterdam. In fact, a used to own a summer timeshare week at a now defunct resort that was 20 minutes by train from Amsterdam. It is well worth a visit.
However, there are European cities I would rank above Amsterdam if you have not visited them - Venice, Prague, Tallinn, Vienna, Rome, Krakow, and Dubrovnik.

We were there in Oct last year for two full days. It's an interesting city and not too large. Three nights should give you a pretty good idea of the place. We love the museums (Rijks, Van Gough, etc.), canal boat ride and taking walks. There should be plenty to see.

Try using Trivago. That will show you pricing for sites other than just priceline. Or are you trying to bid for a hotel?

Look to go to Brussels for 3 days as well, Go to Bruges https://www.visitbruges.be/en It is like a little Venice. If you get an early start 1 full day is all you need
